Production area: Pressoni locality; under the administration of Monteforte d’Alpone, at 200/250 meters above sea level, facing East, South/East.
Soil: Clayey basaltic soil.
Training system: Pergola veronese semplice and short espalier.
Vintage: Third week of September. Selection and manual harvest into plateaux on a single layer.
Drying: In well ventilated rooms until January/February. Very soft pressing with 35% must yield.
Fermentation: 25-30 days in temperature controlled stainless steel tanks.
Aging: 12 months in temperature controlled steel tanks. Aging in bottle: 12 months.
Description: Golden color; fine and pleasantly ethereal nose, with spicy notes of exotic fruit and dried apricot. Sweetness in the mouth is fully gratifying, palate is complex and balanced with a typical final almond scent.
Food matches: Excellent with dry pastries, traditional Christmas and Easter sweets, with cheeses and mustard.
