Grapes: 90% Garganega- 10% Trebbiano.
Production area: Hills of the classic zone between the villages of Soave and Monteforte d’Alpone. The vineyards are located at an altitude of 200/250 meters above sea level.
Soil: Generally basaltic of volcanic origin, with a markedly calcareous skeleton of costal sedimentary origin.
Training system: Simple Veronese pergola and low espalier (Guyot).
Vintage: Third decade of September. Manual harvesting in 15 kg crates, grape sorting, destemming and soft pressing with a must yield of about 60%.
Fermentation: Temperature controlled steel tanks.
Aging and refermentation: Long Charmat method with prolonged “sur lie” stop. In bottle 1 month.
Description: Brilliant straw yellow colour with greenish reflections; wine easy to drink, light and with floral scent. You can perceive notes of white fruit, including pear and its knowledge is soft. Characterized by the presence of vegetal notes, a marked sapidity and a fine and persistent pearl.
Food matches: From starter to dessert; ideal with first courses, white meat and fish.
Service temperature: 4-6°C.
